On food item that I love is pancakes but being diabetic traditional ones were removed from the menu. Here is my answer to that problem.
My Flax Pancake
3 tablespoons of flax meal (I grind my own from seeds)
1 teaspoon of splenda or equivalent liquid splenda
1 dash of salt
1 large egg
1 tablespoon of melted butter
1 tablespoon of water
1 teaspoon of vanilla extract
Mix dry and wet ingredients cook as regular pancakes. These may take a little longer to cook but are worth the effort. makes two small pancakes top with Walden farms syrup and/or fruit spread. these are pretty much carb neutral.
