Would you use the process time for pressure canning quarts when you use this size....I did see some available...and I also saw half gallon jars...which I bought for vacuum sealing some dry mixes...

I haven't seen those yet. Tho I have some old ones. And yes - you'd process as for quarts.

If you have a big enough water bath canner (Lehman's has them) you can safely can juice in 1/2 gallons. Helpful if you have a large family. But the canner is pricey. It's rectangular & goes over 2 burners. Someone who can do metal work could probably make one cheaper.

Yeah - you might be able to do 1/2 gallons in one of those! I use a stock pot I got at a 2nd hand store for water bath canning. My speckled canner just isn't tall enough for quarts - even though it's supposed to be.
